Tiramisu - vegan & glutenfree recipe

Tiramisu is one of those desserts I love to make when I have guests or to bring on a special occasion. I'm not a huge fan of those fruity or berry ones, I like the original the most. Since going vegan I had a hard time finding the right recipe. I didn't want to use store bought biscuits because they usually contain some weird stuff. Also getting vegan and glutenfree ladyfingers isn't easy... I actually couldn't find any either.

So I thought I'll make them by myself. But it's so hard! The recipe for the ladyfingers doesn't make the well known fluffy and light biscuits. But after you've soaked them with coffee and cognac they taste very similar. And the best thing: The recipe doesn't contain any refined sugar or weird additives. It isn't healthy either, I just want to clarify that :)

This recipe also contains alcohol, so it isn't suitable for kids. Unfortunately. But the cognac supports the "original" taste so much, I can't replace it yet.

I really hope you like this vegan, glutenfree, refined sugar free tiramisu. And let me know if you have any tips how I can bake the perfect ladyfingers or replace the cognac :)

TIRAMISU - VEGAN & GLUTENFREE

Makes about 6-8 servings

LADYFINGERS

Ingredients

1/2 cup coconut milk
1/2 tsp vanilla bean powder
2 tbsp apple sauce
1/2 cup coconut sugar
2 tbsp maple syroup
1/4 cup coconut oil (liquid)
a pinch of salt

1 cup buckwheat flour
1/2 cup rice flour
1 tbsp coconut flour
3 tsp baking powder

Preheat oven to 200°C

Preparation

1. Mix all ingredients from the first section very well.
2. Combine the dry ingredients from the second section in a separate bowl.
3. Slowly add the dry mixture to the wet while mixing.
4. You'll get a pretty thick dough, that's what you want. Don't add too much liquid, you want them to turn out crunchy!
5. Put a parchment paper on your baking tray. Form little sausages with the dough. Let enough space between them.
6. Sprinkle some coconut sugar on top. Bake for 10-15 min. They're done when they become golden on the sides.

Little side note: Prepare them right before you use them. They can't be stored!

CREAM

Ingredients

400g silken tofu
1/2 cup coconut milk
150g  margarine
1/4 cup coconut oil
1/4 cup coconut sugar
1/4 cup maple syroup
1 tsp biscuit cognac

You'll also need 1 more tsp cognac, cacao powder and 2-3 espresso.

Preparation

1.  Blend everything :) I used my high speed blender, my hand blender couldn't combine it properly... (Mine is pretty cheap though). The mixture is very fluid, it will become the perfect cream, I promise ;)

2. Put the ladyfingers into your mold. Let them soak a mixture of 2-3 espresso and 1 tsp biscuit cognac. When there's no coffee left in your mold you can spread the cream on top. Put the finished tiramisu for at least 5 hours into the fridge, best is overnight.

Sprinkle some cacao powder on top before you serve it.

Side note: Use a high quality silken tofu and margarine. I once used "cheaper" ones and the tiramisu didn't harden properly.

Enjoy!

You can serve the tiramisu in a classic gratin like mold or make some servings in cute little glasses.
