easy vegan & glutenfree pancakes
Pancakes are perfect as a special treat on a cold Sunday morning. Since going glutenfree I had a bit a hard time finding the right flours. I finally managed to create an easy and delicious recipe without using a premade glutenfree flour mixture. And also without using oats, which make me always feel very full.

They also taste great when they're cold :) You can also easily warm them up in your toaster!

PANCAKES - VEGAN & GLUTENFREE
Makes about 7 small pancakes (1 big serving or 2 small ones)
Ingredients
1 mashed banana
1/2 cup almond milk
1 tsp coconut oil
1 tsp maple syrup
1/2 tsp vanilla bean powder
1/2 tsp cinnamon
1 1/2 tsp baking powder
1/4 cup white rice flour
1/3 cup buckwheat flour
Topping options:
banana
peanut or almond butter
maple syrup
apple
cinnamon
berries
Preparation
1. Combine all wet ingredients in a bowl.
2. Add the other ingredients one by one to the bowl and stir after each of them.
3. Bake them in a pan with some coconut oil
Add your favorite toppings. Enjoy!
