Chocolate Chip Cookies - Vegan & glutenfree
When temperatures are falling we all want to cuddle up in comfy socks and a soft blanket. And what's better then eating yummy cookies and drinking a hot tea or coffee while watching some Netflix?
Since I went glutenfree I really missed chocolate chip cookies. There are some options out there but they aren't comparable to some fresh and warm homemade cookies (otherwise let me know where I can get some here in Switzerland 😊 ). And don't forget the amazing smell when you open the oven 😍
That's why I created the recipe for these golden chocolate chip cookies. They're ready to eat in like 30 minutes!
They taste a bit like caramel. Outside they're slightly crunchy and soft on the inside.

CHOCOLATE CHIP COOKIES
vegan & glutenfree
Makes about 10 average sized cookies
Ingredients
3/4 cup buckwheat flour
1/4 cup wholemeal rice flour
1/4 cup coconut sugar
2 tbsp coconut flour
1/2 tsp baking soda
1 tsp corn starch
1 pinch salt
1 pinch vanilla bean powder
1/2 tsp cinnamon
1/4 cup coconut oil
1/4 cup date sauce
2 tbsp peanut butter
2 tbsp almond milk
1/4 cup chocolate chips
Preparation
1. Combine all dry ingredients in a bowl (first section).
2. Add the wet ingredients to the bowl (second section). Combine well!
3. Add the chocolate chips.
4. Bake at 180°C for 10-12 minutes until the edges turn golden.
Tip: Double the ingredients and store some cookies in the freezer!
Add some macadamia or other nuts for some extra crunch.
