Zimtsterne aka cinnamon stars have always been my favorite Christmas cookies. For me, there's no Christmas without them. This year I created my own recipe. Well, actually I created 2 and a half recipes :) Why half a recipe? You'll find out later.

The first recipe is more like a traditional Zimtsterne recipe: Easy and quick to make, without any special tools. And of course it's vegan and glutenfree like all my recipes.

The second recipe is a raw vegan one! Yes, raw vegan cinnamon stars, without all the sugar but still very delicious. After all, I like them even more then the traditional ones 🙈  (On the pictures they're the darker ones).

Now the 2nd and a half recipe: You can actually bake the raw vegan cookies! This way you have pretty healthy cookies (well, if you choose the healthy icing) which taste just like the original ones but are so much healthier for you! Because even though it's Christmas, I don't want to stuff myself with tons of sugar :)

ZIMTSTERNE (cinnamon stars) 
vegan & glutenfree
Makes about 24 stars

Ingredients
3 cups ground almonds
1 tbsp cinnamon
1 tbsp lemon juice
1/3 cup maple syrup
1 tbsp water

Icing:
1/2 cup powdered sugar
1/2 lemon (juice)

Preparation
1. Put all ingredients into a bowl and knead.
2. Put it into the fridge (or outside because we all know the fridge is pretty full around Christmas) for about 1/2 hour.
3. Roll out the dough and cut out your cookies.
4. Bake them for 6-8 minutes at 200°C.

5. Mix the icing and coat them. Let them dry for some time before you put them into a jar.

Tip: Roll out the dough between two parchment papers, works much easier :)

ROHKOST ZIMTSTERNE
(raw cinnamon stars) 
vegan & glutenfree
Makes about 14 stars

Ingredients
6 soft dates
1 1/2 cups ground almonds
2 tbsp cinnamon
1 tbsp raw almond butter
2 tbsp water
lemon juice

Icing:
2 tbsp coconut puree
6 tsp coconut milk
3 tsp coconut oil
about 10 drops fresh lemon juice

Preparation
1. Put all ingredients into a blender or food processor and blend until a dough forms.
2. Roll it out and cut out your cookies.
3. Put them into the fridge.

4. Prepare the icing: Combine everything except the lemon juice.
5. Add the juice drop by drop while mixing until you get the desired consistency.
6. Keep the finished cookies in the fridge.

Tip: You can bake the raw cookies at 200°C for 4-6 minutes, they taste just like the original ones :) And when you add the traditional icing, nobody can tell a difference, but they're still better for you.
