You might think this kinda looks like a Bounty bar but I'm sorry to disappoint you, it never was my intention to create one...
This coconut bar contains a layer of hemp hearts, chia seeds and almonds, which are packed with proteins, omegas and more!

As usual this recipe doesn't contain any white sugars, I used maple syrup (which isn't actually raw but you can use a liquid sweetener of your choice such as agave or coconut nectar).

If you aren't into coconut, I suggest to try these carrot cake balls. And if you're just a little bit into coconut but don't like an overload of it, try these vanilla & chocolate energy bliss balls 🍫


Let's get started:

COCONUT BARS
(raw) vegan & glutenfree
Makes about 15 bars (you can freeze them)

Ingredients
2 cups desiccated coconut
1/4 cup maple syrup (use your favorite raw vegan liquid sweetener)
1 tbsp coconut oil
1 tbsp coconut butter
1 tbsp coconut flour
1 1/4 cup coconut milk

1/4 cup maple syrup (use your favorite raw vegan liquid sweetener)
1/4 cup hemp hearts
1 cup ground almonds
1/2 tsp vanilla bean powder
1 tbsp chia seeds
1 tsp coconut oil

Chocolate coating:
3/4 cup coconut oil
9 tbsp cacao powder
1 1/2 tbsp vanilla bean powder
3 tbsp maple syrup (use your favorite raw vegan liquid sweetener)

Preparation
1. Put everything from the first section in a bowl, dry ingredients first, stir, add the liquid and combine all well. Set aside.
2. Put everything from the second section in a bowl, dry ingredients first, stir, add the liquid and combine all well.
3. Put the nut layer into your mold (use parchment paper) and press well.
4. Add the coconut layer and also press well.
5. Freeze it for about 1 hour, then carefully cut your bars.
6. Freeze until they're completely hard.
7. Coat them with the chocolate and store them in your fridge.

Enjoy!

Tip: If you feel like 15 coconut bars are a lot, you can easily freeze them and when ever you feel like having one, put it into the fridge to unfreeze.
