What's more comforting then a slice of warm banana bread on a rainy day? There isn't a lot I'd say :)

This recipe is as usual vegan, glutenfree, oil free and free from refined sugar. The way I did it it requires a blender but you can easily make it without one.

It takes about 15 minutes to prepare the bread.

If you don't like the walnuts just don't use them, if you love them, add more! This recipe is perfect to choose your own favorite ingredients; You can't really do anything wrong.

In the banana bread I made are chocolate chunks, so if you want to make it free from refined sugars, choose obviously those without sugar ;)

You might think a whole loaf of banana bread is too much because you're maybe in a 1 or 2 person household. No worries! Got ya 😜 Check out the tips beneath the recipe.

BANANA BREAD
vegan, glutenfree, oil free & free from refined sugar
Makes 1 loaf

Ingredients

DOUGH
3 bananas (mashed if you don't have a blender)
4 dates (4 tbsp date sauce, agave or maple syrup if you don't have a blender)
1/2 cup almond milk

2 tbsp chia seeds
6 tbsp water

1/2 cup teff flour
1/2 cup buckwheat flour
1/4 cup rice flour
a pinch of nutmeg
1/2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
2 tsp Maca powder (optional)
2 tbsp corn starch
1/2 cup ground almonds
a pinch of salt

2 tbsp apple sauce
1/4 cup chocolate chunks or walnuts (optional)

DECORATION (optional)
walnuts or pecans
cacao nibs

Preparation
1. Put all the ingredients from the first section into your blender. Blend until smooth.
2. Put the chia seeds into a small bowl and add the water. Set aside.
3. Add all the dry ingredients into a bowl an stir until well combined.
4. Add the banana mixture to the dry ingredients, stir, then add the apple sauce and then the chia seeds (they should have soaked all the water by now).
5. Mix well. The consistency shouldn't be runny (not like a pancake dough!). More like a super moist pizza dough that easily sticks on your fingers.
6. Add the chocolate chunks or what ever nuts you want to.
7. Prepare your mold: Add parchment paper or coconut oil.
8. Fill your mold and add the dough. Top with nuts, sliced banana or cacao nibs.
7. Bake at 180°C for 50 - 60 minutes.
8. Let it cool for a bit and remove from mold while it's still warm.

Enjoy!

Tip: If you made too much bread, cut slices and freeze them. Like this you can take out one slice and put it into your toaster to enjoy a fresh piece anytime!
Tip 2: You don't like bananas? Try and make it with butternut squash, just a a bit more spices :)
