Apple strudel

When I think about winter holidays and the food I loved to eat as a kid, apple strudel probably comes to my mind first. When ever we went skiing (I was snowboarding though) and we went for lunch in one of the restaurants on the ski run, I've either ordered a big serving of french fries OR apple strudel with vanilla sauce. And of course a big cup of hot chocolate!

I haven't had apple strudel in years and when I was thinking about creating another recipe with apples, it suddenly came to my mind.

It might not be a traditional recipe (how could it, I don't use dairy, eggs, gluten or sugar) but for me it still tasted exactly like in my childhood memories.

There's not much more to say about it, except that it's perfect for a snowy afternoon activity ⛄

APPLE STRUDEL WITH VANILLA SAUCE
vegan - glutenfree - free from refined sugar - oil free
Makes 6-8 servings

Ingredients

Dough
2 cups glutenfree oats (make flour in a blender)
3 tbsp lupin flour
1/2 cup buckwheat flour
1 pinch of salt
5 tbsp apple sauce
4 tbsp white almond butter
10 tbsp warm water

1 tsp water
1 tsp white almond butter
1 tsp apple sauce

Filling
5 peeled apples
Juice of 1/2 lemon
1/3 cup raisins
1/3 cup ground hazelnuts or almonds
4 tbsp date sauce (can use maple syrup as well)
1/4 tsp ground cloves
1/2 tsp cinnamon

Glaze
1 tsp white almond butter
1 tsp date sauce
1 tsp water

Vanilla Sauce
2 cups almond milk
1/4 cup coconut milk
1 vanilla pod
2 tbsp maple syrup
2 tbsp corn starch
1 tbsp white almond butter
1 pinch of turmeric

Preparation
1. Add all dry ingredients of the dough into a bowl and mix.
2. Add all wet ingredients of the dough into a separate bowl and stir well.
3. Combine dry and wet and knead your dough. It should be easy to knead but not be too dry and so not crumble. Set aside.
4. Cut your apples into squares and mix them with the lemon juice.
5. Add the other ingredients of the filling into your bowl and mix.
6. Roll out the dough (I recommend rolling it out on a baking paper) about 1-2 mm thick into a big rectangle.
7. Mix the water, almond butter and apple sauce and spread it all over the dough except an about 2 cm large space on one side.
8. Put the filling on top (like you would make a wrap or burrito) and fold over the dough.
9. Turn it upside down so you can't see the seam.
10. Mix all the ingredients of the glaze in a small bowl and spread it over the strudel.
11. Bake at 200°C Two-sided heat for about 35 mins.

12. Prepare the vanilla sauce: Put all the ingredients into a sauce pan (scrape out the vanilla pod first of course) and stir very well. Cook while stirring until you get the desired consistency.

Enjoy best while warm!

Tip 1: Put the whole vanilla pod into your sauce pan after you've scraped it out for some extra flavor. Just don't forget to take it out before serving :)
Tip 2: If you often bake without oil and so often need small servings of apple sauce, put the leftover apple sauce into ice cube mold and freeze. It unfreezes pretty quickly!

Gott ich war bis eben noch völlig ratlos, was ich heute als Dessert mache, aber ein weihnachtlicher Apfelstrudel ist immer eine gute Idee! Außerdem passt er pefekt zu meinem Kalbsbraten von Aumaerk.ch in Apfel-Weißweinsoße. Keine Ahnung warum ich nicht schon selbst viel früher auf die Idee gekommen bin einen Apfelstrudel zu machen. :)
